The Kyoto distillery is the very first artisanal gin distillery in Japan, located in Minami-Ku, southern Kyoto, near the famous Fushimi region. This area has been renowned for centuries for its traditional production of nihon-shu (Japanese sake). This exceptional terroir benefits from a unique abundance of natural raw materials: the pure and crystalline waters of Fushimi, as well as a wide range of locally grown ingredients such as yuzu, sansho, and the famous Uji teas with unforgettable aromas.
The KI NO BI Kyoto Dry Gin stands out due to an extremely refined and complex production method. The botanical extracts are divided into six distinct categories — base, citrus, tea, herbs, spices, and flowers — each macerated separately in high-quality rice alcohol before being distilled individually. These unique distillates are then meticulously blended and left to mature together to allow a perfect fusion of flavors. This artisanal process guarantees a harmonious balance and a rare aromatic depth in every bottle of gin.
The "K" edition was born from a prestigious collaboration with the Kilchoman Distillery, an independent Scottish distillery known for its exceptional single malt whiskies from the Isle of Islay. This small-scale distillery combines traditional farming and on-site malting to produce whiskies of great purity. The "K" edition is aged in American oak casks that previously held Kilchoman single malt whiskies. This aging imparts a subtle peaty and smoky influence to the gin, perfectly synergizing with the delicate original botanical blend, thus offering a rich and innovative tasting experience.
