Jacoulot - Raspberry Liqueur 18%
Founded in 1891, Maison Jacoulot perpetuates in Burgundy a historic know-how as a distiller and liquor maker. Initially recognized for its Marc and Fine de Bourgogne, it has gradually enriched its expertise with a wide range of creams and fruit liqueurs. The Raspberry Liqueur is one of its recent creations and required more than two years of research before arriving at the final recipe. Several dozen varieties of raspberries were studied to select the one offering the best balance between aromatic intensity, indulgence, and freshness. This requirement perfectly reflects Jacoulot's philosophy, which places central importance on quality and the natural expression of the raw material. Unlike the Raspberry Cream also offered by the house, this version belongs to the liqueur range and seeks more finesse and balance. With its 18% vol., it offers a particularly accessible and generous expression of the fruit.
The recipe was built around a raspberry specifically selected for the subtlety of its aromas and its balance between sweetness and lively acidity. The liquor maker's work aims to preserve this identity rather than mask it behind excessive sweetness or too strong an alcoholic presence. At 18% vol., the alcohol primarily plays a role as an aromatic support and lets the fruit take center stage. The texture nevertheless retains enough substance to give the liqueur a true presence on the palate. The balance between sugar, alcohol, and the natural acidity of the raspberry thus constitutes the essential element of its profile. This construction allows it to be appreciated alone while offering enough intensity to be used in mixology. The house especially intends it for cocktails combining raspberry with effervescence and freshness.
The tasting is dominated by a clear expression of ripe raspberry, with an immediately indulgent character but without heaviness. The nose evokes fresh fruit and small red berries, with a sensation both sweet and slightly tangy. On the palate, the texture is supple and enveloping, while the natural freshness of the raspberry balances the sweetness. The low alcoholic strength helps maintain a particularly fruity sensation and allows easy tasting on ice. The finish extends the raspberry flavors with a pleasant liveliness that avoids any overly syrupy impression. It can also serve as the base for a Raspberry Spritz, combined with a Crémant de Bourgogne and a touch of sparkling water. A versatile liqueur, equally suited to aperitifs, cocktail preparation, or accompanying a red fruit dessert.
