\nThe prestigious Iwamura brewery was founded in 1797 in Iwamura, Ena district, located in the heart of Gifu prefecture, Japan. The Watarai family, with several generations of artisanal expertise, began producing sake which they paid as an annual tribute to Iwamura Castle. Initially, the brewery also produced miso and soy sauce, hence its Japanese name jōzō (fermentation/brewing) rather than shuzō (brewery). Since the mid-20th century, the house has been exclusively dedicated to crafting high-quality sake. The rice used is locally grown, and the pure water comes from an ancestral well dug over 400 years ago. The rice polishing ratio averages 52%, ensuring finesse and elegance. The water, low in calcium and magnesium, promotes slow fermentation, resulting in a sake with a soft, perfectly balanced taste.
