Les Greffiers 2021 is a vintage brut nature produced by hand-picking grapes at the perfect ripeness. Slow pressing of whole bunches, vinification by plot with indigenous yeasts to preserve the imprint of the vintage. Second fermentation in the bottle followed by a long aging on slats to refine the mousse and gain complexity. Disgorgement without liqueur, zero dosage for a clear reading of the fruit and Loire limestone. Limited production.
The nose opens with ripe lemon, white apple, and fresh pear, joined by hawthorn blossom, a hint of almond, and a chalky undertone. The palate is lively and silky, carried by a fine effervescence. The heart of the palate blends zesty citrus, crisp apple, and light brioche. The salinity stretches the texture and adds depth. The finish is long, straight, delicately smoky, with a noble bark bitterness that signals the maturity of the 2021 vintage.
At the table, serve Les Greffiers 2021 with oysters, sea bass ceviche, sushi, sea bream tartare, pikeperch with beurre blanc, or roasted poultry with lemon. It pairs well with mature goat cheeses. Ideally, serve at 9 to 10°C in a tulip glass to channel the bouquet and highlight the texture. Open fifteen minutes before serving; a quick decanting may be considered for a very young bottle.
