Ternay 2022 is a vintage brut nature produced using the traditional method. Slow pressing of ripe but fresh grapes, vinification by plot with indigenous yeasts to preserve the fruit's character. Second fermentation in the bottle followed by extended aging on slats to refine the mousse and gain complexity. Disgorgement without the addition of liqueur, zero dosage for a clear expression of the vintage and terroir. Pure, dry, and slender profile.
The nose opens with ripe lemon, green apple, and fresh pear, complemented by notes of white flowers, almond, and a hint of chalk. On the palate, the attack is lively and precise. The effervescence is fine, the texture gains in breadth with flavors of zesty citrus, crisp apple, and light brioche. The saline structure stretches the middle of the palate. The finish is long, straight, slightly smoky, with a noble bark bitterness that signifies the maturity of the Chenin in the Loire climate.
At the table, serve it with oysters, sea bass ceviche, sushi, sea bream tartare, pikeperch with beurre blanc, or roasted poultry with lemon. It pairs well with mature goat cheeses. Ideal temperature between 9 and 10°C in a tulip glass to channel the bouquet and highlight the texture. Open fifteen minutes before serving; a quick decanting may be considered for a very young bottle.
