Ad Fines - Gracchus 2021
Domaine Ad Fines is located in Ménerbes, in the Luberon . It was founded in 1994 by Michel Rocher , a wine and terroir enthusiast. He worked with Michel Tardieu for winemaking and aging, and Claude Bourguignon for the vineyard and soil purification. The 2.8-hectare vineyard is planted on sandy clay-limestone soils, derived from Burdigalian molasses. Producing barely 10,000 bottles per year, Domaine Ad Fines is distinguished by the rarity of its wines, their precision, and their remarkable aptitude for aging.
Gracchus is the estate's second wine. It is a blend dominated by Syrah , supplemented by Serine from a mass selection of Côte-Rôtie and Cabernet Sauvignon. After manual harvesting, sorting is carried out by chiseling. Vinification is done by plot with cold pre-fermentation maceration. Fermentation occurs spontaneously with indigenous yeasts and maceration lasts between 3 and 5 weeks with rack and return, pumping over and gentle punching down. The batches are aged in new Burgundy barrels, one-wine and two-wine barrels for the Serines and Cabernet Sauvignon, less recent for the Syrah, for a period of 12 to 18 months. After blending, the wine is aged in vats for an additional 5 months.
