The Assier family's adventure in Martinique began in 1710 , when Jean Assier , a young lawyer from Montpellier , settled on the island to work for the Governor of Phélypeaux . Several centuries later, his direct descendant, Yves Assier de Pompignan , undertook an ambitious project: to create a new distillery that embodied both the history and richness of the West Indian terroir . The takeover of the Habitation du Simon , located in the heart of an exceptional terroir, as well as Yves' deep passion for his island, allowed him to develop a brand of rum that blended tradition and modernity .
In 2010 , the project took shape with the rigorous selection of great old rums intended for blends. An aging cellar equipped with barrels that had contained Cognac and a laboratory were installed at the Habitation. The first selections, aged 6 to 11 years , were refined in 320-liter French oak barrels. At the same time, Yves Assier chose an innovative and traditional distillation method, with a copper Charentais still completed with a seven-plate column. Temperature-controlled fermentation tanks promote long fermentations to extract a maximum of aromas from the cane wines. After lengthy administrative procedures, the distillery dedicated to agricultural rums officially opened on December 31, 2015 , in a former 18th-century sugar purger. After ten years of learning and work, the A1710 distillery was inaugurated in December 2016 by Yves Assier and his team.
A1710 rums are produced organically from sugar cane grown without fertilizers or pesticides on a plot of land on the estate where the “ Blue Cane ” and “ Purple Cane ” varieties grow.
The A1710 x Fort Saint-Louis collection is the result of a unique collaboration between the A1710 distillery and Fort Saint-Louis , a French Vauban -type military fort, listed as a Historic Monument and naval base of the French Navy in the Antilles , located in Fort-de-France . This limited edition includes two vintages, a white rum and an aged rum , both carefully crafted by cellar master Cédric Paviot . The aged rum is produced in only 300 copies .
