The Assier family's adventure in Martinique began in 1710 with the arrival of Jean Assier , a young lawyer from Montpellier , who came to work for the Governor of Phélypeaux . Several centuries later, his direct descendant, Yves Assier de Pompignan , gave life to an ambitious and passionate project: to found a new distillery that reflected both the history and the richness of the West Indian terroir . By taking over the Habitation du Simon , ideally located in the heart of an exceptional terroir, Yves Assier de Pompignan , driven by his deep love for the island and its resources, has been working for many years to create a brand of rum that combines tradition and modernity .
In 2010 , the project officially took shape with the launch of the selection of great old rums intended for blends . An aging cellar equipped with barrels that had previously contained Cognac , as well as a laboratory , were set up at the Habitation. The first selections, aged 6 to 11 years , were then placed for aging in 320-liter French oak barrels . At the same time, the search for a distillation process combining innovation , quality and respect for traditions led Yves Assier to choose a Charentais still entirely made of copper , completed with a seven-plate column . Temperature-controlled fermentation tanks , favoring long fermentations , were adopted to obtain cane wines rich in aromas. After long administrative procedures, the official opening of the distillery dedicated to the production of agricultural rums was granted on December 31, 2015 . The rum distillery was then set up in a former 18th-century sugar distillery , in the heart of the estate. After ten years of learning and work, the A1710 distillery was inaugurated in December 2016 by Yves Assier de Pompignan and his team.
A1710 rums are produced organically , from sugar cane grown without fertilizers , pesticides , herbicides or any chemicals, in a plot planted directly on the site where two specific varieties grow: “Blue Cane” and “Purple Cane” .
The A1710 x Fort Saint-Louis range is a unique collaboration between the A1710 distillery and Fort Saint-Louis , a French Vauban -style military fort located in Fort-de-France , a listed historic monument and naval base of the French Navy in the Antilles. This limited edition includes two vintages, a white rum and an aged rum , both carefully crafted by cellar master Cédric Paviot . The white rum is produced in just 600 numbered bottles .
