The Stauning Distillery is a prestigious distillery located in the heart of Denmark. Founded in May 2005 by nine Danish whisky enthusiasts — including a doctor, a chef, a butcher, a teacher, a helicopter pilot, and four engineers — their ambition was to create a unique whisky inspired by the famous peated whisky produced on the island of Islay in Scotland. The first distillation took place as early as August 2006, followed by several months of test production rich in continuous improvements and optimization of the artisanal process. From autumn 2006, production benefited from the enthusiasm of renowned expert Jim Murray, who, after tasting their new make, encouraged the founders to significantly increase their annual production, from 200-400 liters to 6,000-8,000 liters per year.
The exceptional quality of Stauning whiskies is based on the rigorous use of local raw materials: the grain — mainly rye and barley — is purchased from Danish farmers, while the malting is carried out according to Scottish tradition, directly on the ground. The malt is then gently dried in a kiln using a flow of hot air blown from below, ensuring even drying. To obtain that famous smoky character so typical, local peat from the nearby peat bog is used to smoke the malted grains. After grinding, crushing, and resting the grain for 3 days, the wort undergoes a double distillation — first in a 1,000-liter still, then in a second 600-liter still. The resulting new make is then aged in oak barrels for at least 3 years, developing complexity, depth, and roundness before being bottled as an exceptional single malt whisky.
Curious represents this iconic new make from the Stauning Distillery. This base spirit, made mostly from rye (51%) and malted barley (49%), is subtly smoked with local peat and heather before benefiting from optimal barrel aging, giving it its unique and powerful aromatic profile, characteristic of peated whiskies.
