SAB’s is an exceptional collection of fine spirits crafted by Alambic Bourguignon, based in Beaune, in the heart of the prestigious Burgundy region. This artisanal range was launched by Mathieu Sabbagh, with the ambition to revive unique eaux-de-vie from the Burgundy terroir, reflecting the winemakers who highlight their plots and noble grape varieties.
The originality of the project lies in the use of a mobile still, allowing distillation directly at the harvest sites: thus, SAB's captures the best of the Burgundy vineyard, working with emblematic grape varieties such as Pinot Noir and Chardonnay from prestigious terroirs like Beaune, Meursault, Gevrey-Chambertin, or Pommard. The copper still, composed of three vessels, enhances the aromas and nuances of each raw material through steam distillation, preserving all the aromatic richness of the grapes.
The distiller’s expertise is expressed in the careful tasting of each batch of distillate, allowing precise selection of the "cut" point to extract the greatest finesse. Subsequently, the eaux-de-vie are aged in small 228-liter Burgundy oak barrels, then refined over many years at natural temperature, benefiting from the region’s climatic variations (hot summers, cold winters) which enrich their aromatic palette. Bottling is done by hand in beautiful brown apothecary bottles, sealed with wax whose color varies according to the cuvée, thus guaranteeing the authenticity and artisanal quality of each bottle.
The Fine de Bourgogne SAB’s is an elegant lees eau-de-vie made from both Pinot Noir and Chardonnay of Burgundy, carefully steam-distilled to preserve its purity and aromatic intensity. It benefits from a 7-year aging in Burgundy oak barrels, followed by a 6-month refinement in Cognac barrels, giving it unmatched complexity, subtle aromas of ripe fruits, soft spices, and a beautiful length on the palate.
