The Distillerie Lemercier Frères is located in Fougerolles-Saint-Valbert, in the heart of the aromatic tradition-rich region of Franche-Comté. Before 1800, the Lemercier family, settled in Grand-Fahys, a hamlet of Fougerolles, was recognized as a family of significant cultivators and orchard keepers, specialists notably in the artisanal production of high-quality kirsch and plum brandy. Gradually, their ancestral know-how allowed them to exceed family needs for brandy, leading them to become renowned professional distillers. In 1866, brothers Isidore and Joseph Lemercier officially created the distillery to develop their authentic trade in wines, kirsch, and artisanal liqueurs. Five years later, in 1881, they built a building equipped with modern steam distillation equipment and launched the production and marketing of the famous absinthe liqueurs, a symbol of their unique expertise. To intensify their production, a rectification column was installed in 1895, thus increasing the capacity to produce high-quality neutral alcohol, an essential base ingredient for their exceptional liqueurs, especially absinthe.
The Pastis 1811, launched in 2017, is a refined expression of this distilling heritage. This exceptional pastis is crafted using an artisanal method combining maceration and expert distillation of carefully selected seeds and plants: absinthe, mugwort, gentian, licorice, star anise... Each ingredient is handled rigorously to respect the historic recipe found in the archives and attics of Distillerie Lemercier Frères, thus guaranteeing unparalleled authenticity. The distillates produced benefit from optimal aging of at least 9 months in glass demijohns, allowing the complex aromas to fully develop before the final blending. This process ensures a unique aromatic richness, finesse on the palate, and a perfect balance between tradition and innovation.
