Hampden - Pagos - Ex Sherry Cask - 52%

Hampden Estate is one of the oldest and most prestigious sugar plantations in Jamaica, with a history dating back to 1753 when the estate belonged to Mr. Archibald Stirling from Scotland. In 1779, Mr. Stirling built the Hampden Great House, whose ground floor served as a rum warehouse until the early 20th century. For generations, the Farquarson family operated this iconic property, dedicated to producing high-quality cane sugar and rum, until 2003, when the Jamaica Sugar Company took over. Renowned for its exceptionally fertile terroirs, Hampden Estate produces the best sugarcane in Jamaica, offering maximum sugar extraction from the crushed cane. Historically, Hampden rums were exclusively exported to Europe, England, and Scotland. In 2009, Everglades Farms Ltd, owned by the Hussey family, acquired the estate during a public offer as part of the restructuring of the Jamaica Sugar Company's assets, a government-owned entity. Since this acquisition, Everglades Farms has made significant investments in the distillery, creating many jobs throughout the town of Trelawny and providing essential infrastructure support to more than 17 neighboring communities and schools.

The water used for Hampden rum production does not come from underground aquifers but from an exclusive mountain water collection system, ensuring optimal purity; after use, only perfectly clean water is returned to nature. Fermentation is long and carried out exclusively with natural yeasts, a rare artisanal process that gives the rums complexity and aromatic richness. Hampden Estate is among the last distilleries in the world to practice batch distillation, with four operational stills, the oldest being a John Dore installed in 1960, with a capacity of 7,560 liters. Aging takes place in a unique tropical environment: the rums are aged for more than 7 years under the Jamaican climate, which is equivalent to about 25 years of aging in a European climate. Moreover, Hampden rums are produced, matured, and bottled without any additives, without added sugar, tannins, caramel, or glycerin, thus guaranteeing unmatched purity and authenticity.

Pagos is distilled in a traditional pot still, then refined in 500-liter sherry casks that previously contained exceptional quality Oloroso and Pedro Ximénez sherry from the most renowned bodegas in Andalusia. This refining process imparts subtle, complex notes and unparalleled depth to the rum. Fully matured in a tropical climate, Pagos has a high congeners content of 1,603.5 gr/hlpa, of which 394 gr/hlpa are esters, contributing to its intense and distinctive aromatic character.
