La Distillerie du Renard is located in Gignac, in the heart of the prestigious Terrasses du Larzac vineyard, in the heart of Languedoc. Founded in 2021 by Simon Tardieu, this artisanal distillery stands out for its committed philosophy, aiming to produce 100% "natural" spirits, in perfect harmony with the Manifesto of Natural Spirits. This movement promotes the production of exceptional eaux-de-vie that respect the environment, in a context where European regulations have become too lenient regarding the inputs used by distilleries labeled as artisanal.
Simon Tardieu uses a 350-liter copper pot still heated by wood fire, ensuring a traditional and authentic distillation process. His raw materials are rigorously selected, coming from a local terroir cultivated under certified organic farming, without any addition of inputs such as sugars, sweeteners, or chemical additives. The distillation relies solely on a first distillation of wine or beer, which concentrates the alcohol to about 30%. This "brouillis" undergoes a second distillation to eliminate undesirable elements, keeping only the heart of the distillate, for an alcohol content of about 70%. Finally, the alcohol is redistilled with carefully chosen plants and botanicals for each recipe, ensuring a unique aromatic richness.
By refusing the use of industrial rectified alcohol at 96%, required by European specifications, the distillery guarantees exceptional quality and authenticity, even if this excludes its creations from official "Gin" or "Pastis" appellations. This pioneering choice makes La Distillerie du Renard an emblematic player in the revival of natural and committed spirits.
Le Pastiche du Renard is thus made from a local wine eau-de-vie, enhanced by a final distillation with wild fennel and a controlled maceration of fresh plants, offering a perfect balance between tradition, terroir, and organic innovation.
