Ichiro’s Malt is a company specializing in independent bottling of Japanese whisky renowned for its exceptional expertise. Founded by Ichiro Akuto, this unique project is rooted in an atypical workshop located in Chichibu, an iconic town just 100 km northwest of Tokyo, equipped with only two small traditional stills. Akuto's expertise in whisky distillation stems from a prestigious family heritage: his great-grandfather was a pioneer in the production and management of the historic Hanyu sake brewery, established in 1625. In 1941, he obtained an official whisky distiller's license, laying the foundation for a century-old tradition. Akuto's father continued this legacy by acquiring two Scottish stills capable of producing about 400 barrels, combining ancestral techniques with excellent quality. However, the Japanese economic crisis of 2000, compounded by a decline in sake consumption, forced the family to sell the brewery, putting their passion at risk. It was then that Ichiro Akuto, a visionary, transformed this challenge into an opportunity by recovering the precious stills and maturing whisky barrels to launch a new era for Japanese whisky.
Today, Ichiro Akuto continues to refine the techniques acquired at the Hanyu distillery, positioning himself as one of the most innovative and ambitious Japanese distillers on the global market. More than 4,000 barrels – including sherry, wine, and bourbon casks – are currently aging under his meticulous care. Simultaneously, he conducts avant-garde experiments to cultivate local barley, aiming to create a 100% Japanese whisky that fully embodies the authenticity and terroir of Japan.
This exceptional edition was bottled to celebrate the 65th anniversary of La Maison du Whisky, a symbol of expertise and prestige in the world of spirits. This rare whisky was distilled in 2011 and carefully aged in a second fill Bourbon single cask (#5578), offering rich and complex notes with every tasting. The artistic work titled Parity elegantly adorns the bottle, created by the renowned artist Nakajima Hiroyuki. A limited production of 213 bottles guarantees its exclusivity and rarity on the market.
