Ichiro’s Malt is an essential reference in the field of independent bottlings of Japanese whisky, symbolizing excellence and authenticity. Founded by Ichiro Akuto in Chichibu, a town nestled just 100 km northwest of Tokyo, this artisanal distillery stands out for its innovative and traditional approach with only two small pot stills. Akuto's experience and passion are rooted in family heritage. His grandfather, originally a master sake brewer and founder of the Hanyu distillery in 1625, obtained the whisky distiller's license in 1941, a historic turning point. His father continued this tradition by importing two Scottish stills capable of producing about 400 barrels. Despite an economic crisis in Japan in 2000 and a significant decline in sake consumption, Ichiro Akuto rose to the challenge with resilience, recovering the stills and maturing barrels to preserve and develop a unique know-how.
Today, Ichiro Akuto embodies the spirit of innovation and excellence in contemporary Japanese distillation. He oversees the maturation of more than 4,000 whisky barrels aged in Sherry, wine, and Bourbon casks, also engaging in local barley cultivation to create a truly Japanese and authentic whisky.
