Alice and Olivier De Moor - Chablis 1er Cru - Vau de Vey 2023
The estate Alice and Olivier De Moor, based in Courgis in the heart of the Chablis region, is among the most precise and respected signatures of contemporary Burgundy. Working in organic farming since the 1990s with a strong biodynamic sensitivity, the couple favors a parcel-based and minimalist approach to accurately reveal each climat. The Premier Cru Vau de Vey 2023 comes from an emblematic terroir, characterized by its steep slopes and southeast exposure, promoting gradual ripening and great freshness. The Kimmeridgian soils, rich in limestone and marine fossils, bring this chalky and iodized signature typical of great Chablis.
