Alice and Olivier De Moor - Chablis 1er Cru - Mont de Milieu 2022
The Alice and Olivier De Moor estate, located in Courgis in the heart of the Chablis region, has established itself as a major reference for great natural white wines of Burgundy. Since the 1990s, the couple has been working their vineyards organically, with an approach inspired by biodynamics and a deep respect for the expression of the terroirs. The Mont de Milieu climate, classified Premier Cru, is situated on the right bank of the Serein, benefiting from a privileged sun exposure that promotes optimal ripening of the Chardonnay. The Kimmeridgian soils, composed of clay, limestone, and marine fossils, give the wine a mineral signature of great precision. This 2022 vintage is characterized by a sunny but perfectly controlled year, resulting in a wine that is both ample, taut, and deeply rooted in its origin. In the cellar, vinification is carried out with minimal intervention, through spontaneous fermentation with indigenous yeasts, followed by extended aging in barrels to refine the structure without masking the terroir. On the palate, the attack is ample and bright, quickly supported by a precise and vibrant mineral tension. Served between 10 and 12°C, it will ideally accompany noble seafood, fish in sauce, crustaceans, or fine poultry.
