The Maison Ferroni is ideally located in Aubagne in Provence, very close to Marseille, the heart of the Provençal tradition of spirits. The headquarters of this prestigious distillery is at the Clos des Spiritueux, an iconic estate dedicated to the excellence of artisanal spirits. Guillaume Ferroni, a master distiller passionate about ancient spirits and aromatic plants, has developed a complete range of refined spirits, combining ancestral know-how, botanical diversity, and exceptional natural heritage. His collection includes exceptional rums, traditional whiskies, fine liqueurs, as well as an authentic pastis, all made from ingredients mostly grown and harvested on the estate or wild in the surrounding area.
The Pastis from Clos des Spiritueux is carefully crafted from fresh plants harvested on the estate's 7 hectares, known for its unique biodiversity. These naturally growing aromatic plants are complemented by Mediterranean plants specially cultivated in the estate's botanical gardens. The manual harvest, carried out artisanally from April to October, ensures the freshness and aromatic richness of the plants. They are then macerated separately in demijohns filled with superfine alcohol to best preserve all their flavors. After patient blending, the mixture is aged for one year in oak casks, which adds complexity and roundness to the spirit. Finally, natural licorice and anise essence are added before a precise adjustment of the alcohol degree to guarantee perfect balance.
