Cuatro Gallos is a family business founded by four brothers passionate about the artisanal and authentic production of Pisco, the emblematic Peruvian brandy. Initially dedicated to modest production for their close circle, this house quickly gained international renown thanks to the excellence of the quality of its grapes and its traditional know-how. Today, Cuatro Gallos cultivates its own vineyards and perpetuates the artisanal method to offer an exceptional Pisco to enthusiasts around the world. The emblematic vineyards of Cuatro Gallos are located on the El Carmen farm, in the district of San Juan Bautista, in the heart of the Ica valley, a region recognized for its unique climatic conditions in Peru. This terroir benefits from an ideal climate, alternating intense heat during the day and coolness at night, as well as fertile clay soil, ensuring the perfect ripening of the grapes used for distillation.
The harvest is carried out manually at full maturity to preserve all the organoleptic qualities of the bunches. The grapes are then gently crushed in a destemming-press machine allowing the extraction of the must and juice, thus initiating natural fermentation. The fresh wine obtained is transferred to a traditional copper still for careful distillation. The gradual heating releases volatile aromatic compounds that immediately condense into vapor, giving birth to the distillate. Only the main fraction, called the "heart of the run," is selected to become Cuatro Gallos Pisco, guaranteeing purity and finesse of aromas. The Pisco is finally refined for a minimum period of 8 months in stainless steel tanks, ensuring stability and preservation of the characteristic floral and fruity notes.
