AKASHI - Modern Sake - Junmai Daiginjo Genshu - 16%
The Akashi Sake Brewery is ideally located in the prestigious Hyogo region, on the edge of the Seto Inland Sea, in Japan, the historic birthplace of the finest sakes. The Yonezawa family, pioneers and passionate, settled in Akashi as early as 1856, combining tradition and innovation. After mastering with excellence the ancestral art of sake brewing, this emblematic family extended their expertise to distillation in 1917. Today, a century later, Kimio Yonezawa, a recognized master blender, proudly continues this heritage by creating authentic and refined sakes, symbols of Japanese excellence.
This Junmai Daiginjo Genshu sake is made from the precious Yamadanishiki rice, an exceptional variety carefully cultivated in the Hyogo region. Its finesse is guaranteed by a rigorous polishing that removes 62% of the outer layers of the grain to keep only the core, at 38%, thus revealing delicate aromas of remarkable purity. This cuvée is known for its harmonious and slightly semi-dry profile, offering an elegant and perfectly balanced tasting experience, ideal for sake lovers seeking authenticity and modernity.
