Not yet able to market aged whisky, due to the minimum 3-year aging required to obtain official whisky status, Holyrood offers a unique selection of New Make, as well as high-quality rums and gin. The term New Make refers to the raw spirit, obtained directly from the still, usually with a high alcohol content. This "new make spirit" is sold without aging or with very short aging, offering enthusiasts a rare sensory experience to discover the purity and complexity of the distillate before it is matured in casks. This approach highlights the heritage and tradition of spirits while innovating in production.
Made By Edinburgh embodies the distillery's excellence and innovation, resulting from an in-depth exploration of yeasts derived from local beers and the use of carefully selected specialty malts. This unique creation is fermented with a typical Edinburgh beer yeast, inspired by the famous local 80 Shilling Ale, combined with a precise blend of distilling malt and two specialty malts: Crystal Malt and Chocolate Malt, bringing aromatic richness, roundness, and finesse.
