The Cuatro Gallos vineyards are located on the El Carmen farm, situated in the emblematic district of San Juan Bautista, in the heart of the Ica valley in Peru. This region benefits from a unique terroir, internationally renowned for producing very high-quality wines and piscos, thanks to ideal climatic conditions: warm days, cool nights, and clayey soil particularly suitable for grape cultivation.
The grape harvest is done manually, at perfect maturity, to guarantee the best aromatic expression. The clusters are then gently crushed in a destemming-pressing machine to extract the must, thus initiating natural fermentation. The resulting wine is distilled in a traditional copper still, where heat allows the vaporization of volatile components. These vapors are immediately condensed, and only the "heart of the distillation," the purest and most aromatic fraction of the distillate, is kept to produce Cuatro Gallos Pisco.
To enhance its taste profile, the Pisco is then carefully aged in stainless steel tanks for a minimum period of 8 months, ensuring a harmonious maturation that preserves all the finesse, complexity, and elegance of this exceptional artisanal spirit.
