The prestigious history of JM rums begins in the heart of lush vegetation, within one of the most beautiful distilleries in Martinique, the Habitation Fonds-Préville, located in Macouba. The first distillations, initiated in 1845 by Jean-Marie Martin, gave birth to this iconic brand bearing his initials "JM." At the beginning of the 20th century, in 1912, the distillery was taken over by Ernest Crassous de Médeuil and his brother Gustave, manager and owner of the Habitation Bellevue. Following significant improvement and optimization work, these two estates merged to become the exclusive Habitation Fonds-Préville. Today, the Bernard Hayot Group is the majority shareholder of the SCA Héritiers Crassous de Médeuil, thus ensuring the continuity of this exceptional tradition.
The sugar canes used by Clos des Spiritueux are carefully cultivated on the Fonds-Préville estate, which spans 225 hectares. This unique terroir, located on the fertile slopes of Montagne Pelée, benefits from an ideal climate and geology to produce raw material of exceptional quality. The fermented juices are then distilled using two traditional Creole copper columns, up to a maximum degree of 72°, to preserve the authentic aromatic character of the sugar canes intact. The pure and crystalline water used comes directly from the natural springs of Montagne Pelée, thus ensuring a natural and balanced distillation.
This cane sugar syrup, made from a rigorous selection of the best sugar canes from Martinique, is a must-have for fine cocktail enthusiasts. It will enhance your traditional Ti Punches and other mixological creations, bringing natural sweetness, aromatic richness, and incomparable finesse. On the Clos des Spiritueux site, find this high-end syrup, ideal for combining quality and authentic flavors in all your cocktail and exotic drink recipes.
