Opthimus Cum Laude stands out as an exceptional cuvée celebrating the signature balance and finesse of Opthimus. Made from column-distilled molasses rums, this nectar is matured using the renowned solera method, guaranteeing an average age of 15 years. Aged primarily in former bourbon barrels, it reveals a rich aromatic palette of vanilla, delicate caramel, and subtly toasted oak. Bottling at 41.3% preserves the roundness, while offering remarkable aromatic precision and depth.
The subtle nose initially reveals captivating aromas of vanilla, toffee, and brown sugar, before evolving into notes of candied orange, ripe banana, discreet coconut, and a hint of cocoa. On the palate, the texture is soft and ample, displaying a silky grain around noble molasses, crème brûlée, and dried fruits. Sweet spices, such as cinnamon and nutmeg, gradually take hold, supported by a chiseled and harmonious oak. The finish is persistent and clean, subtly combining salted caramel, orange peel, and milk chocolate, all wrapped in a controlled warmth.
Enjoy neat between 16 and 18°C in a tulip glass to enhance the aromatic complexity, or over a large ice cube for a tighter structure. This exceptional rum also works wonders in cocktails: Old Fashioned with rum enhanced with a dash of cocoa bitters, El Presidente or a tonic and lime Highball. As for pairings, it reveals all its delicacy with a chocolate fondant, a banana-caramel tart or roasted pineapple, and goes perfectly with a mature hard cheese.
