Domaine de l'Ours Bleu - Rochenard 2021
Domaine de l'Ours Bleu, led by Jérôme Baillargeau, has quickly established itself as one of Saumur's rising stars. Located in Montsoreau, the estate cultivates approximately 14 hectares of vines spread between Montsoreau, Brézé, Fontevraud, and Chinon. Farmed organically, it cultivates limestone, tuffeau, and clay terroirs that produce precise, fresh, and deep wines. Each vintage reflects a commitment to sincerity and respect for the king of Saumur grape varieties: Cabernet Franc.
The Rochenard cuvée comes from a plot planted on tuffeau soils mixed with clay, which gives the wines aromatic intensity and a chiseled texture. The 2021 vintage, marked by cooler climatic conditions, produced slender, highly precise Cabernet Francs with a characteristic Loire freshness. Vinification is carried out in stainless steel vats with gentle extraction, then aging is carried out in a measured manner (in vats and old barrels) to preserve the purity of the fruit.
The deep ruby color reflects a wine that is still young. The nose is fine and expressive, revealing notes of red fruits (cherry, raspberry, redcurrant) combined with floral (peony, violet) and spicy touches. On the palate, the attack is supple but precise, carried by a straight and taut frame. The fine and elegant tannins structure the wine without harshness. The finish, long and fresh, stretches on nuances of graphite, pepper and crisp fruits, typical of Cabernet Francs made from tuffeau. A serious but accessible wine, which combines drinkability and aging potential.
Ideal with roast poultry, grilled pigeon, fine charcuterie, or mature goat cheese. It also pairs well with regional dishes such as country terrine or roast pork with herbs. Serve at 15–16°C after aerating for 30 minutes. Aging potential: 6 to 8 years. With Rochenard, the estate has created a terroir-inspired cuvée that perfectly illustrates the desired style: a Cabernet Franc that is pure, juicy, and precise, with the mineral energy and freshness that make the reputation of great Saumur reds.
