Domaine Cassagne et Vitailles was born in Montpeyroux, in the heart of Languedoc, in a Mediterranean environment where the reliefs, limestone soils, and fresh influences allow the production of wines that are both sunny and balanced. Founded by Matthieu Rollin and Nicolas Seffusatti, the estate has established itself through a pursuit of precision, depth, and sincerity in the expression of its terroirs. Its confidential vineyard of about 7 hectares is worked with meticulous attention, favoring manual labor, natural grass cover, and hand harvesting. The Combarels Blanc 2025 cuvée is made from a blend of complementary white grape varieties, mainly centered around Chardonnay, Grenache Blanc, and Viognier. Chardonnay brings freshness, structure, and notes of white-fleshed fruits, while Grenache Blanc provides volume, roundness, and a more Mediterranean dimension. Viognier enriches the blend with its floral signature, nuances of apricot, peach, and soft spices. The grapes are carefully vinified to preserve the aromatic brightness and liveliness of the wine, in a style designed for sharing and conviviality. The 2025 vintage, still very young, presents itself as an immediate dry white, built more on freshness and suppleness than on power.
