Maison Ventenac - Carole 2025
Maison Ventenac is one of the most dynamic estates in Cabardès, a few kilometers from Carcassonne, at the foot of the Montagne Noire and facing the Pyrenees. The property profoundly renewed its approach at the beginning of the 2010s, with a clear desire to produce wines that are more direct, freer, and closer to their grape variety. The estate claims a philosophy of unadorned wines, with fermentations using indigenous yeasts, little or no sulfur, very few additives, and limited use of wood. This approach gives rise to frank, modern, and very readable cuvées, designed for immediate pleasure without sacrificing the identity of the terroir. Carole 2025 belongs to the Signature range, which highlights accessible, precise, and gourmand wines. This white cuvée perfectly illustrates Maison Ventenac's ability to offer a different Languedoc Chardonnay, fresher, more tense, and less sunny than expected. It is a pleasure white, bright and very easy to pair, ideal for discovering the contemporary style of the house.
The Carole 2025 cuvée is made exclusively from Chardonnay, a grape variety here worked in a fresh and oceanic interpretation. Maison Ventenac emphasizes the particular character of its terroirs, both Languedocian by the light and influenced by a more marked freshness, which gives the wine more tension. Chardonnay, often associated in the South with rich and gourmand profiles, takes here a livelier, more crystalline, and more thirst-quenching expression. The vinification favors the purity of the fruit, without heavy oaking, to preserve the aromatic brightness and clarity of the grape variety. The estate's approach relies on neutral containers such as stainless steel, concrete, or amphora, with a pursuit of just simplicity and natural expression. The 2025 vintage produces a dry, fresh, and precise white, supported by a fine and tangy mouthfeel. Carole thus stands out by its balance between light roundness, tension, and a mineral finish.
In the glass, Maison Ventenac Carole 2025 reveals a clear and bright robe with pale yellow reflections. The nose opens on white flowers, pear, lemon, white peach, and a touch of ripe citrus. The palate is fresh, supple, and very pleasant, with a clean attack and a slightly enveloping texture. The whole remains crystalline, precise, and thirst-quenching, supported by a fine acidity that lengthens the tasting. The finish returns to white fruits, citrus, and a discreet mineral sensation, in a dry and very digestible style. This Chardonnay will be perfect as an aperitif, but also with grilled fish, seafood, shrimp, light poultry, a summer salad, or fresh cheese. Serve around 9 to 11°C, in its youth, to fully enjoy its aromatic brightness and freshness.
