El Hispano - Jalapeño Liqueur - 30%
El Hispano is a line of Mexican artisanal liqueurs developed by the family-run distillery Casa Tarasco, operating since 1907 in the state of Michoacán. Specializing in the sugarcane distillate known as "Charanda," the house perpetuates traditional recipes passed down from generation to generation. Modernized and once reserved for local use, these liqueurs are now being bottled for the first time at the initiative of BBC Spirits, following an on-site tasting.
The Jalapeño version is made from cane molasses distilled in a column still. Fresh, carefully deseeded jalapeños are then steeped in the spirit for a 45- to 60-day maceration. The liquid is then filtered, reduced to 30% with pure water, and then lightly sweetened with brown sugar to round out the profile.
" A surprising balance between sweetness and character: the brown sugar brings roundness and indulgence, while the jalapeños reveal a subtle and well-integrated vegetal heat. The attack is sweet, the spicy intensity increases gradually, then gives way to a long, warm and elegantly spicy finish. Enjoy chilled as a digestif or to add some pep to your classic cocktails like a Margarita or a revisited Paloma."
