Rosemont Ananas Pineapple rum is a spirit produced by Distillerie Rosemont , located in Montreal, Canada . It was founded in 2013 by Lilian Wolfelsberger and Stéphane Dion with the aim of producing high quality artisanal spirits using local and ethically produced ingredients. It is the first distillery in Canada to work with Charentais double distillation stills. Thanks to two successive heatings, the double distillation makes it possible to concentrate the alcohol and to select the most delicate aromas.

Rosemont Ananas Pineapple rum is inspired by a recipe from the "New Complete Manual of the Liquorist Distiller" written in 1857. The pineapples come from Costa Rica; they are harvested when fully ripe, and after being peeled and cut, their skin and flesh macerate in rum from new French oak barrels. This infusion is distilled in a Charantais still, then blended with a molasses rum aged in new barrels . Homemade caramel and a touch of fragrant chamomile are added before bottling.
