Pastis - Clos des Spiritueux - 2020 - Wooden box - 45%

The Maison Ferroni is located in Aubagne in Provence, not far from Marseille, in the heart of a region rich in Mediterranean traditions and flavors. The distillery's headquarters is situated at the prestigious Clos des Spiritueux. Guillaume Ferroni, a true enthusiast of ancient spirits and aromatic plants, has developed a range of authentic and refined spirits, combining history, Provençal cultural heritage, and exceptional natural treasures. He offers an exclusive selection of rums, whiskies, liqueurs, and pastis, most of the plants used being cultivated and harvested wild directly on the family estate.

The Pastis du Clos des Spiritueux is meticulously crafted from fresh plants grown on the 7 hectares of the estate. These aromatic plants are harmoniously complemented by Mediterranean plants carefully cultivated in the aromatic gardens of the Clos. After manual harvesting carried out between April and October, each plant is macerated separately in demijohns filled with superfine alcohol. This traditional method allows the extraction of all essential flavors and aromas. The macerations are then blended and aged for one year in oak casks, giving the pastis an incomparable finesse and complexity. The distillate is carefully drawn off before the addition of natural licorice and anise essence, then reduced to the final alcohol degree for ideal tasting.
