Mas des Chimères - Coteaux du Salagou Blanc 2022
The Mas des Chimères is an emblematic estate of the Coteaux du Salagou, located in Octon, in the heart of Hérault, on the shores of Lake Salagou. The vineyard extends over spectacular soils of red ruffes mixed with basalts and limestones, giving the wines a unique and immediately recognizable mineral identity. The estate is managed according to biodynamic principles, with meticulous soil work, controlled yields, and a constant search for balance between ripeness and freshness, in order to faithfully express the strength and finesse of this unique volcanic terroir.
The Coteaux du Salagou Blanc 2022 is a confidential cuvée made from old white vines planted on these steep slopes bathed in light. The 2022 vintage, marked by dry climatic conditions, allowed for concentrated grapes while maintaining a beautiful natural tension. The vinification favors a low-intervention approach, with natural fermentations and measured aging, to preserve the pure expression of the fruit and the soil.
On tasting, the wine stands out with a complex nose combining ripe white fruits, floral notes, and slightly spicy touches, supported by a pronounced mineral framework. The palate is ample, structured, but balanced by a saline freshness that stretches the finish and brings remarkable drinkability.
