Clos des Spiritueux - Ced's Rums - Ti Ced - The Aged - Cherry Almond Espelette Pepper - 32%
Established near Nantes, Les Rhums de Ced, represented by its creator Cédric Brément, has established itself as a leading name in the production of exceptional artisanal rums. At Clos des Spiritueux, we showcase its creations made from rigorously selected rums, hand-cut fresh fruit, and meticulous infusions. The “Les Vieillis” collection, available at Clos des Spiritueux, showcases rums whose prolonged maturation enhances richness, complexity, and length on the palate, for highly gastronomic taste experiences.
The Cherry Almond Piment d'Espelette cuvée is part of the Les Vieillis des Rhums de Ced range. This recipe is distinguished by a blend of barrel-aged rums, infused separately and then combined according to a rigorous process: fleshy cherries and whole almonds reveal fruity intensity, depth and delicate praline notes, while the Espelette pepper, precisely measured, brings relief and warmth without masking the refinement of the whole. The separate maceration of the ingredients, the gradual blending and the right dose of sugar give this arranged rum a perfect balance. The 32% alcohol content enhances the expression of the fruit, the subtly spiced sweetness and the aromatic purity, in a 70 cl format ideal for sharing.
On the nose, this arranged rum opens with intense aromas of black cherry and morello cherry, enhanced by notes of fresh almond, marzipan, a delicate touch of vanilla, and a slight hint of orange peel. On the palate, the attack is round and rich, with juicy cherry, before evolving into roasted almond and the delicious stone of the fruit. Espelette pepper envelops the tasting with a controlled spicy caress, offering length and persistence without excess heat. The finish, elegant and clean, reveals nuances of cocoa, a return of candied cherry, and a warm, balanced spicy imprint.
Whether as a side dish or at the bar, serve Cherry Almond Piment d'Espelette rum chilled over crushed ice, as an old-fashioned with a dash of bitters, as a highball with dry sparkling water, or as a citrus sour for a change of pace. Its unique flavor profile pairs beautifully with chocolate fondant, a red fruit almond tart, or even mature hard cheese. Ideally, enjoy it between 6 and 8°C, keep it refrigerated after opening, and consume it within three to four months to preserve the brightness of the fruit, the spicy expression, and the finesse typical of Les Rhums de Ced creations selected by Clos des Spiritueux.
