The 2023 Bourgogne Rouge beautifully illustrates this philosophy. Made from Pinot Noir grapes grown on carefully cultivated clay-limestone soils, this wine benefits from natural vinification, without added yeasts, and with partial destemming depending on the vintage's ripeness. Aging in old oak barrels for about twelve months preserves the fruit's vibrancy while imparting a delicate tannic structure.
