The Domaine Roc des Anges, located in Montner in the Pyrénées-Orientales, is an essential reference for the great wines of Roussillon. Certified in organic farming since 2008 and in biodynamics since 2011 (Biodyvin), the estate cultivates its schist plots in a constant search for balance and pure expression of the terroir. On the northern slope of Força Réal, the old and draining soils force the vine to dig deep, giving rise to wines with a unique mineral intensity. With Les Terres de Fagayra, the estate also perpetuates the great tradition of Maury natural sweet wines, interpreted with precision and elegance.
The cuvée Les Terres de Fagayra – Maury Ambré Hors d’Âge is made from a blend of Grenache Blanc, Grenache Gris and Macabeu, coming from vines aged 8 to 60 years. The vinification relies on indigenous yeasts, with a mutage on juice to preserve aromatic freshness and the natural richness of the fruit. The aging is carried out in foudres and 228-liter barrels, allowing a slow and controlled evolution towards complex amber notes. This prolonged aging gives the wine remarkable depth and a silky texture, while maintaining tension and balance.
On tasting, this Maury Ambré Hors d’Âge reveals a bright amber-colored robe. The nose reveals aromas of dried fruits, fig, candied orange peel, honey, and soft spices, accompanied by subtle noble oxidative notes. The palate is ample, rich, and perfectly balanced, carried by a beautiful freshness that avoids any heaviness. The finish, long and persistent, reveals nuances of caramel, walnut, and citrus zest. This natural sweet wine will ideally accompany foie gras, blue-veined cheeses, or dried fruit desserts, and can also be enjoyed alone at the end of a meal.
