Torabhaig Distillery is located in the village of Teangue, in the Sound of Sleat on the Isle of Skye , Scotland . Established by Mossburn Distillers in January 2017, it is one of Scotland's newest distilleries and the second on the Isle of Skye. The distillery is located in an old, abandoned 19th -century farmhouse near the Allt Gleann stream, which has been renovated over a period of 4 years. The mash tun can brew 1.5 tonnes of malt and 8 Dougas pine fermentation vats have been installed. Two copper pot stills, named Sir Iain and Lady Noble, are used to produce a peated distillate, one of the most phenolic in Scotland. Production is carried out by a local team of nine distillers, many of whom are new to the industry. The distillates are aged in oak barrels, mostly ex-bourbon barrels and occasionally in sherry hogsheads, French virgin oak barriques and other types of casks.
Each Legacy Edition showcases a different facet of the Isle of Skye's new whisky. Sound of Sleat is crafted from Concerto and Laureate barley, fermented for 72 hours with Pinnacle MG yeast. It has been aged exclusively in first-fill American oak (Quercus Alba) casks .
