A pioneer in the promotion of Chenin Blanc, the estate has established itself as a benchmark thanks to its demanding viticulture, respectful of the terroir. The organic approach, certified throughout the vineyard, illustrates the Blot family's commitment to authentic and sustainable production. The Brut Tradition Bio is a sparkling cuvée made using the traditional method, exclusively from Chenin Blanc. It embodies the effervescent expression of Montlouis, where freshness, precision, and elegance intermingle. The vines, planted on clay-limestone and tuffeau soils, give the wine a characteristic minerality and beautiful depth. Upon tasting, the Brut Tradition Bio presents a brilliant pale yellow color with golden highlights, enlivened by a delicate effervescence. The nose expresses delicate aromas of apple, pear, white flowers, and citrus, complemented by a hint of brioche. The Domaine de La Taille aux Loups is located in Montlouis-sur-Loire , in the Loire Valley . It has existed since 1988, then under the management of a Bordeaux resident who farmed 7 hectares of vines belonging to André Chapeau and Clément Germain. In 1990, wine broker Jacky Blot took care of the vinification of the vintage and over the years, became attached to the Domaine. This is how, in 1992, he became its owner. In collaboration with Christophe Mesliand , they quickly built a great reputation. Jacky Blot attaches importance to respecting nature and the grapes: no pesticides, herbicides or chemical fertilizers. The estate has been certified in organic farming since 2012. The choice of traditional plowing and manual harvesting is highlighted, as soon as the grapes reach perfect maturity. He avoids interventions in the cellar and prefers traditional aging, without rushing the steps. Jacky Blot also owns the Domaine de la Butte in Bourgueil. Following the sudden disappearance of Jacky Blot in May 2023, his son Jean-Philippe took over management of the estates.
Brut Tradition is produced using the traditional method . It is made from Chenin Blanc fermented in barrels, then the second fermentation occurs at low pressure to obtain a light foam. The dosage is very low to preserve the characteristics of the base wine.
