Alice and Olivier De Moor - Bourgogne Aligoté 2024
The estate Alice and Olivier De Moor, located in Courgis a few kilometers from Chablis, has established itself as one of the major signatures of natural wines from Burgundy. Trained in Dijon, they have been cultivating their vines since the 1990s with a demanding approach, now certified organic and inspired by biodynamics. Their work is based on a fine knowledge of clay-limestone terroirs and a constant desire to reveal the purity of the grape variety. The Bourgogne Aligoté 2024 comes from old vines located around Courgis, where the soils give the wine tension and minerality. This cuvée perfectly embodies the qualitative renaissance of Aligoté, long underestimated, but here brought to a remarkable level of expression.
In the cellar, vinification is carried out naturally, without additives or filtration, to preserve the energy of the fruit and the transparency of the terroir. The aging, often shared between tank and large oak cask, allows to maintain freshness and precision while bringing a slight complexity. The nose opens with aromas of citrus, green apple, and white flowers, accompanied by a subtle stony note. On the palate, the attack is lively and chiselled, supported by perfectly integrated acidity that highlights the mineral tension of the wine. The body remains elegant, with beautiful clarity and a remarkable sensation of purity. The finish, long and saline, extends this impression of balance between energy and gourmandise.
Served around 9 to 11°C, it is suitable both as an aperitif and for precise gastronomic pairings. It will ideally accompany seafood, grilled fish, crustaceans, or dishes with lemony and iodized accents. Its natural liveliness also makes it an excellent partner for fresh or goat cheeses. Accessible in its youth, it can evolve over a few years developing more complex and slightly honeyed notes. This Bourgogne Aligoté 2024 perfectly illustrates the De Moor vision: a straight, lively wine deeply rooted in its terroir, capable of competing with much more prestigious whites.
