Mas Mellet - Fleurs des Salines - White 2024
Mas Mellet is located in Gallician , in Costières-de-Nîmes in the Gard region . The estate was taken over in 2002 by Emilie and Brice Bolognini , when they were in their twenties. They work the 27 hectares of vines that were abandoned using organic farming , certified since 2007.
The fleur d'une saline is the top layer of salt harvested by hand, which is rare. The Fleurs des Salines cuvée is produced in collaboration with Eric Pfifferling , from Domaine de l'Anglore located in the Rhône Valley, in Tavel . It is made from Vermentino grapes harvested and sorted manually at aromatic maturity. The grapes are directly pressed and the vinification and aging take place in 220-liter stoneware eggs . The vinification is carried out without the addition of sulfur.
Grape variety: 100% Vermentino
"The palate is chiseled, almost iodized, with a chalky length reminiscent of the thin crust of salt hand-picked from the Salins du Midi. Serve it with an oyster ceviche or try a bold pairing with fresh goat cheese topped with olive oil: you'll see the Mediterranean winking in your glass!"
