Chateau Puynard - Bacon 2020

Château Puynard is located in Berson, in the Blaye-Côtes de Bordeaux appellation area. Taken over in 2016 by Andrew Eakin , the aim has always been to produce the best possible wine with a desire to experiment, through blends, containers and maturations. The conversion of the estate to organic farming was an integral part of the acquisition project. Andrew began his journey in the wine industry in 2010 when he set up the ‘Bottle Apostle’ wine, beer and spirits stores in London. Moving from retail to production and sales gave him a broad understanding of the entire process and certainly gave him a much deeper appreciation for each bottle made, sold and consumed. Through organic viticulture and improved cultivation techniques, Château Puynard strives to produce wines from the Right Bank of Bordeaux that reflect the vineyards in which they are grown.

Bacon is a micro-cuvée inspired by a winemaking process frequently used in Australia. It is made from Merlot whose vines are 35 years old. The vinification is traditional in stainless steel vats and during alcoholic fermentation, the wine is racked to finish its fermentation in wood. It is then aged in 10 hectoliter tuns .
