Cabassaou is the most secretive and legendary cuvée of the domaine. Coming from a tiny parcel located just below La Tourtine, sheltered from the mistral and bathed in optimal sunshine, this clay-limestone terroir allows Mourvèdre to reach its fullest expression. The 2023 vintage, generous and perfectly balanced, delivers a wine of extraordinary depth, combining power, concentration, and elegance. Produced in extremely limited quantities, Cabassaou stands as the pinnacle of the Tempier range.
Its deep, dark garnet robe announces intensity. The bouquet is remarkable, unfolding ripe black fruits, truffle, leather, spices, and garrigue, lifted by a mineral touch. On the palate, the texture is dense and majestic, with powerful yet refined tannins. The concentration is impressive, yet perfectly balanced by underlying freshness. The endless finish reveals all the nobility of Mourvèdre, with notes of licorice, pepper, and candied fruits. A legendary wine, built for decades of cellaring.
