Château Yvonne - Cuvée Yvonne - Red 2022
Château Yvonne is a property located in Parnay, in the Anjou-Saumur appellation, and covers 13 hectares: 9.5 hectares of Cabernet Franc and 3.5 hectares of Chenin Blanc. The estate has had several owners since its creation in 1996 and has been managed by Mathieu Vallée since 2007. The vineyard has been cultivated organically since 1997, and biodynamically since 2012, on a terroir of aeolian sand and tufa.
Château Yvonne Rouge 2022 is made from Cabernet Franc , grown in Saumur-Champigny on a Tuffeau limestone terroir. Vinification is carried out in 38 hectoliter truncated cone-shaped vats with indigenous yeasts for 4 weeks. Malolactic fermentation and aging take place in a troglodyte cellar for 22 months. The wine spends 12 months in barrels, 20% of which are new, then 9 months in foudre.
