Sottimano - Mate 2024
Azienda Agricola Sottimano is located in Neive, Piedmont , Italy . Sottimano was founded in the late 1960s by Rino Sottimano in the Barbaresco region. It has since expanded to other prestigious vineyards in the Piedmont region. Its 18-hectare vineyard is organically farmed and includes five Barbaresco crus: Currà, Cottà, Fausoni, Pajorè, and Basarin. The estate is managed by Rino Sottimano, his wife Anna, and their children Andrea, Elena, and Claudia. Their philosophy is to use natural yeasts, long macerations, and aging on lees for malolactic fermentation, as was the practice of previous generations.
Maté is made from hand-harvested Brachetto . Fermentation takes place with indigenous yeasts, and maceration lasts 7 to 8 days according to the infusion principle. The wine is aged for 8 months in stainless steel vats .
