Domaine Camin Larredya is located in La Chapelle de Rousse, in the Jurançon wine region. It has been owned by Jean-Marc Grussaute since 1988 and was voted "Winemaker of the Year 2023". The Camin Larredya vineyard covers 9.5 hectares, 4 hectares of which are cultivated on terraces. The vines are managed using certified organic farming methods , and each vintage comes from a specific plot. The estate also purchases conventional grapes from Christian Pédéflous and Philippe Vigneau and Sylvie and David Lacazette.
Au Capcèu is made from Petit Manseng raisiné , without botrytis. The vines are 20 to 45 years old and are planted on a clay-siliceous terroir on altered puddingstone subsoils. After manual harvesting by successive sorting, the whole bunches are put into direct pressing. Fermentation takes place with indigenous yeasts in 225-liter barrels and 1200-liter tuns. The wine is aged for 10 months on lees in 225-liter barrels (50%) and 1200-liter tuns (50%). It contains 81 g/L of residual sugars.
