The Waterford Distillery is located in the city of Waterford, Ireland . The project was initiated by Mark Reynier , the man behind the revival of Islay Bruichladdich Single Malt Whisky, inspired by the world's greatest winemakers. The distillery is a facility originally built by Diageo in 2004 and converted to a distillery in 2015. The production of terroir whiskeys gives importance to where the barley comes from, where and how it is grown. Mark Reynier works with 86 Irish farms growing barley on 19 different soils , including organic and biodynamic barley. With a highly elaborate digital logistics system, each farmer's harvest is harvested, stored, malted and distilled separately.
Heritage Barley 1.1 is made from Tom Bryan 's Hunter barley , grown on his Donoughmore farm. The Hunter variety, named after plant breeder Dr. Herbert Hunter, was introduced in 1959 and renowned for nearly two decades for its distinctive flavor. Disappeared from the Irish landscape since the late 1970s, replaced by more economically rewarding crosses, all that remained of Hunter was a 50 gram bag in the seed bank of the Irish Department of Agriculture, Food and Welfare. Marine. Planted in greenhouse grow bags, that 50 grams grew to four kilograms, and the cycle repeated over and over again over two years, producing 25.5 tons of malting barley; enough to fill 50 barrels. The barley was harvested on August 8, 2018 and then distilled between February 23 and 26, 2019. Maturation lasted 3 years, 2 months and 6 days. The whiskey matures in a combination of 45% Kelvin Cooperage first fill American oak barrels, 21% French oak barrels that have held Château Palmer wine, 18% Virgin American oak barrels and 16% wine barrels natural sweetness from Rivesaltes . 9,048 bottles were produced.
