François Crochet represents the third generation of winemakers in the family and has gradually imposed a style that is both pure, refined, and deeply marked by the soils. The vineyard is worked organically and biodynamically, with a constant search for just maturity, freshness, and mineral definition. The estate has become known for Sancerre whites of great clarity, far from the overly varietal or demonstrative expressions of Sauvignon Blanc. This Sancerre Blanc 2025 cuvée perfectly embodies this approach: a terroir wine, precise, saline, and luminous. The Sancerre Blanc 2025 cuvée is made exclusively from Sauvignon Blanc, the emblematic grape of the appellation. It comes from a blend of parcels spread over the main soil types of the Sancerre region, dominated by caillottes (limestone pebbles), complemented by calcareous clays and some flint. The caillottes bring brightness, tension, and limestone precision, while the clays provide more volume and structure on the palate. The flint adds a smoky, stony, and saline dimension that extends the finish. The grapes are hand-harvested and gently pressed whole cluster to preserve the purity of the juice. Fermentation takes place with indigenous yeasts, respecting the fruit and the place. The 6-month aging on fine lees in stainless steel tanks adds texture and stability without masking the natural energy of the Sauvignon.
In the glass, Domaine François Crochet Sancerre Blanc 2025 reveals a clear and bright robe with pale yellow reflections. The nose opens with lemon, grapefruit, gooseberry, blackcurrant leaf, and white flowers, with a very clear mineral touch. The palate is fresh, straight, and precise, driven by a chiseled acidity and a beautiful sense of purity. The body gains volume thanks to the lees aging but maintains a taut, salivating, and perfectly balanced line. The finish is long, chalky, and saline, with a return of citrus, wet stone, and fine bitterness.
