Domaine du Pas de l'Escalette - Ze Cinsault 2024
Domaine du Pas de l’Escalette is among the important references of high-altitude Languedoc, at the foot of the Larzac plateau, in an environment of terraces, dry stone walls, and preserved hillsides. Founded and managed by Julien and Delphine Zernott, the estate has built its identity around fresh, precise wines deeply marked by the influences of Larzac. The vineyards benefit from a cooler climate than other Mediterranean areas, with nights that preserve the acidity and aromatic brightness of the grapes. The estate works in organic and biodynamic farming, with a Biodyvin certification that highlights its commitment to viticulture respectful of natural balances. Ze Cinsault 2024 belongs to the most immediate and delicate cuvées of the estate, while maintaining a true terroir identity. This cuvée highlights the finesse of Cinsault, a often discreet grape variety but capable of producing reds of great elegance when coming from old vines. Domaine du Pas de l’Escalette Ze Cinsault 2024 thus presents itself as a luminous, floral, and deeply digestible Languedoc red.
The Ze Cinsault 2024 cuvée is made from 100% Cinsault, coming from a parcel of old Cinsault located in the Lauroux valley. This area, marked by altitude, freshness, and the limestone influences of Larzac, allows the grape variety to maintain a fine, slender, and aromatic expression. Here, Cinsault produces a wine less built on power and more on mouthfeel, suppleness, and purity of fruit. Available sources describe a gourmand, delicate red, supported by red fruits, lavender, and a precise finish. In the style of Pas de l’Escalette, extraction remains measured to preserve the finesse of the tannins and drinkability. The 2024 vintage highlights a fresh, juicy, and floral expression, perfectly suited for tasting in the first years. Ze Cinsault 2024 thus illustrates a contemporary reading of Languedoc, where lightness, energy, and precision take precedence over concentration.
On tasting, Domaine du Pas de l’Escalette Ze Cinsault 2024 shows a light ruby red color, bright and lightly extracted. The nose may evoke fresh strawberry, raspberry, red cherry, redcurrant, rose, lavender, and a fine touch of Mediterranean herbs. On the palate, the wine is supple, juicy, and very digestible, with a fluid texture and delicate tannins. The freshness of Larzac brings liveliness, while the Cinsault unfolds a crunchy, floral, and slightly spicy fruit. The finish remains clean, precise, and salivating, with a very pleasant sensation of purity and lightness. This red will ideally accompany roasted poultry, veal chop, grilled vegetables, a fine charcuterie board, Mediterranean herb cuisine, or seared tuna. It can be served slightly chilled, around 14 to 15 °C, to preserve its aromatic brightness and silky texture.
