Gaia - Assyrtiko - Wild Ferment 2024

Gaia Wines is one of the most recognized estates on the contemporary Greek wine scene, founded by Yiannis Paraskevopoulos and Leon Karatsalos with the ambition to reveal the potential of great indigenous grape varieties. The Wild Ferment Assyrtiko cuvée comes from the volcanic island of Santorini, one of the most unique terroirs in the Mediterranean, marked by soils of ash, pumice, and basalt. The vines, very old and own-rooted, are trained according to the traditional kouloura pruning to protect themselves from strong winds and extreme dryness. The climate, hot and arid, is tempered by the constant maritime influence of the Aegean Sea. This unique context gives the wines an incomparable tension and minerality. Gaia offers here a precise and modern interpretation of Santorini Assyrtiko.

The 2024 Wild Ferment Assyrtiko stands out by a spontaneous fermentation carried out with indigenous yeasts, followed by partial aging in barrels, which brings depth and complexity without masking the identity of the terroir. The nose reveals intense aromas of ripe lemon, citrus zest, gunflint, and fine smoky notes. The palate is ample and structured, supported by a sharp acidity characteristic of Assyrtiko, perfectly integrated with the body. The texture is dense, almost saline, with a sensation of continuous tension from the beginning to the end of the tasting. The aging brings subtle spicy nuances and a slight roundness that balances the natural power of the wine. The whole remains precise, vibrant, and deeply mineral.

The 2024 vintage confirms the aging potential and gastronomic dimension of this cuvée. This wine fully expresses itself at the table, accompanying grilled fish, seafood, but also more complex cuisines with iodized or spicy accents. Its length and structure make it a characterful Assyrtiko, both intense and refined. Wild Ferment is not a simple varietal expression but a refined reading of the volcanic terroir of Santorini.
