Domaine du Pas de l'Escalette - Escalette Rosé 2025
The Domaine du Pas de l’Escalette is one of the beautiful signatures of high-altitude Languedoc, located at the foot of the Larzac plateau, in a landscape of terraces, dry stone walls, and limestone scree. Managed by Julien and Delphine Zernott, the estate relies on a vineyard perched around 350 meters altitude, benefiting from a cool and windy microclimate. This unique situation allows the production of Mediterranean wines without heaviness, marked by freshness, tension, and great drinkability. The vines are worked using organic and biodynamic farming, with strong attention paid to biodiversity and the natural balance of the soils. Escalette Rosé 2025 fits within this identity, with an IGP Hérault rosé replacing the former Ze Rosé denomination. This cuvée expresses the most immediate, bright, and friendly side of the estate. It perfectly reflects the spirit of Pas de l’Escalette: a wine from the South, but carried by altitude, finesse, and the brightness of the fruit.
The Escalette Rosé 2025 cuvée is made from a blend of Grenache, Cinsault, and Carignan, three southern grape varieties perfectly adapted to the cool terroirs of Larzac. Grenache brings roundness, ripe red fruit, and a gourmand sensation, while Cinsault provides delicacy, suppleness, and a floral dimension. Carignan completes the balance with its tangy freshness, tension, and more nervous energy. The limestone terroirs and the estate’s altitude play an essential role in defining the wine, preserving natural acidity and a clean finish. The 2025 vintage here gives a pale, tender, and very digestible rosé, designed for immediate pleasure without losing precision. The whole favors brightness, lightness, and sapidity rather than a demonstrative or overly aromatic expression. Escalette Rosé 2025 thus presents itself as a simple and refined gastronomic rosé, capable of accompanying sunny days as well as delicate Mediterranean cuisine.
On tasting, Domaine du Pas de l’Escalette Escalette Rosé 2025 offers a pale, bright, and delicate robe. The nose may evoke fresh raspberry, redcurrant, wild strawberry, crunchy red berries, rose, and a touch of citrus. On the palate, the wine is supple, tender, and very digestible, with fine texture and immediately pleasant freshness. The fruit remains precise, never heavy, supported by a slightly tangy framework and a clean finish. The overall sensation is that of a bright, charming, and salivating rosé, tailored for summer tasting but sufficiently structured to accompany food. It will pair ideally with heirloom tomato salad, grilled vegetables, Mediterranean fish, cold poultry, tapas, Provençal cuisine, or light grills. It should be served cool, around 8 to 10 °C, to preserve its aromatic brightness and finesse.
