Clos du Serres - Saint Jean - Larzac Terraces 2023
Domaine Le Clos du Serres is located in the heart of the Terrasses du Larzac , in Languedoc . It was founded in 2006 by Béatrice and Sébastien Fillon . The 15-hectare vineyard is located at the foot of the Larzac plateau, which rises to an altitude of 849 meters, at the crossroads of two climates: Mediterranean and mountain. It is divided into 18 plots, each with a different terroir composed of schists, ruffes, pebbles or sandstone. The work in the cellar is low-intervention, oriented towards very gentle extractions in order to obtain the expression of the terroir. The estate is certified organic .
Saint Jean is a blend of Cinsault (20%), Grenache (20%), Syrah (20%), Carignan (20%) and Mourvèdre (20%) . The vines vary in age from 15 to 40 years, and come from the estate's four terroirs: schist, ruffes, pebbles and sandstone. The wine is aged in concrete vats .
