Justine Baudry signs with Le Clos des Religieuses a wine project that is at once recent, personal, and deeply rooted in Touraine. Established in Montrichard Val de Cher, she chose to leave her native territory, Chinon, to build her own estate around a place rich in history. This path gives a special resonance to La Fille de l’Air, a cuvée whose name evokes movement, departure, and the momentum towards a new landscape. The vineyard extends over 7 hectares in organic conversion, with a major focus on Sauvignon Blanc, the emblematic grape variety of the AOC Touraine. In this part of the Loire Valley, the clay-limestone soils allow the production of whites that are both expressive, structured, and fresh. La Fille de l’Air 2024 thus reflects the emerging identity of the estate, between Loire heritage, freedom of tone, and the search for a Sauvignon Blanc that is deeper than immediate.
The cuvée Justine Baudry Le Clos des Religieuses La Fille de l’Air 2024 is made in AOC Touraine from 100% Sauvignon Blanc. The grapes come from clay-limestone soils, which bring the wine a base of freshness, firmness, and precision. Unlike a more direct expression of Sauvignon Blanc, this cuvée is distinguished by 12 months of aging in 400-liter barrels. This choice gives more volume, richness, and structure, while maintaining controlled freshness. The wood, used as a support for aging rather than as a dominant aromatic marker, accompanies the material and adds depth. The 2024 vintage expresses itself in a broad, velvety, and refined style, with a palate built for the table. This cuvée occupies a unique place in the Clos des Religieuses range, showing a more gastronomic and textured facet of Touraine Sauvignon Blanc.
On tasting, La Fille de l’Air 2024 reveals a Sauvignon Blanc of beautiful intensity, supported by a broad and delicately velvety texture. The nose may evoke ripe citrus, white flowers, yellow fruits, and a slightly toasted nuance linked to barrel aging. On the palate, the wine gains density and relief, with a broader touch than a classic Touraine white. The freshness remains well present, bringing balance to the roundness and avoiding any sensation of heaviness. The finish is long, aromatic, and precise, with a beautiful persistence on ripe fruits and a discreet chalky tension. This Touraine white will pair very well with creamy poultry, noble fish, seared scallops, asparagus risotto, aged goat cheese, or refined vegetable cuisine. It can be enjoyed now after slight aeration but will gain harmony over a few years in the cellar.
